2-3 lbs Pork Shoulder, cut into 2’’ chunks, seasoned with salt and pepper
2 T. minced garlic
1 small onion, chopped
2 T. grated ginger
2 T. soy sauce
1 T. sesame oil
½ c. Chicken stock
4 green onions, chopped
Turn on Instant Pot on Saute mode, add the sesame oil, and brown the Pork for 10 minutes, while stirring occasionally. Remove pork chunks from pot and add onion and garlic to pot to saute. Pour ½ c. chicken stock into the pot to deglaze and scrape onion bits from sides. Stir in 2 T. soy sauce and ginger and place pork back into the pot with the sauce and onion and garlic. Pressure cook for 60 minutes on medium power, natural pressure release. Shred the chunks of pork with two forks and serve with rice.
