Farmer Joe Beef, is our locally sourced beef product. We have established relationships with a few generational farming operations and work with them to provide Main Street Meat quality, local products for our customers. One of those operations, Pfundstein Farms raises Black Angus beef cows, all born and raised in Northern Illinois their entire life. They are grass fed predominately, then finished on a specific grass and grain diet that promotes flavor and tenderness in the meat. Humane animal protocols are followed by not giving any hormones, and antibiotics are only used to treat any cases of illness, if they should occur. All meat is dry-aged for 14-21 days to further enhance flavors.
Farmer Joe Beef is sold in halves or quarters only. Halves are cut to your specifications, a cut sheet will be provided to you. Quarters are cut to our specifications. All meat is cut, trimmed, ground, packaged, and frozen. To keep the process simple and similar to our existing process, we price the meat per pound you take home, NOT the hanging weight of animal. This eliminates confusion of pricing and gives full disclosure to our customers as it relates to the price. Half beef is approximately 300-350# and a quarter beef is approximately 150-175#. Remember these are estimates of the weights you will take home. When placing your order, you will be charged a non-refundable deposit for your purchase. The balance must be paid at the time of pick-up. Orders can take 3-6 weeks to be fulfilled depending on availability. Supplies can be limited at times.
