Oven Baked Parmesan Chicken

4-6 oz. Chicken Breasts

1/2 t. garlic powder

1 t. oregano

2 T. parsley

1 egg

1 c. marinara sauce

1/2 t. black pepper

1 t. salt

2 T. olive oil

1 c. Panko bread crumbs

1/2 c. Parmesan cheese, grated fresh

1 1/2 c. shredded Mozzarella cheese

2 T. minced parsley

Line a baking sheet with foil, and brush foil with olive oil. Preheat oven to 400*. Pat the chicken breasts dry with paper towel and season with salt and pepper. In a shallow dish, mix together the bread crumbs, grated parmesan, and seasonings. In another shallow dish, whisk one egg. Dip each chicken breast into the egg mixture, then into the bread crumb mixture, coating evenly on both sides. Place each on prepared pan. Bake for 15 minutes, or until cooked through. Flip chicken, spoon on 1/4 c. of the marinara sauce, and top each with mozzarella cheese. Turn on broiler, and broil for 2-5 minutes until bubby and melted. Sprinkle parsley over top and serve.
