Bang Bang Shrimp

2 lbs, medium, shelled, deveined Shrimp

Salt/Pepper

3/4 c. buttermilk

Flour Mix:

1/3 c. panko breadcrumbs

1/2 c. flour

1/2 c. cornstarch

1/4 t. paprika

1/2 t. garlic powder

1/2 onion powder

salt/pepper to taste

Bang Bang Sauce:

1 c. Mayo (real mayo!)

2/3 c. Thai Sweet chili sauce

2 T. Siracha (or more, if you like it hotter)

1 t. sugar

1/2 t. black pepper

2 t. white vinegar

1/2 t. garlic powder

1/2 t. onion powder

To make Bang Bang Sauce:

Mix together mayo, garlic powder, onion powder, sugar, sriracha, chili sauce, pepper, vinegar and salt. Set aside.

To make flour mix:

In a shallow bowl, add panko bread crumbs, cornstarch, flour, paprika, garlic powder, and onion powder.

Marinate shrimp with buttermilk, salt and pepper for 5 minutes.

Heat oil in deep frying pan. Drian excess buttermilk from shrimp then completely coat the shrimp in flour mix. With a fork, remove from flour mixture and put into the hot oil in batches. Fry until golden brown. Repeat until all are fried.

When ready to serve, place shrimp on serving platter and pour Bang Bang Sauce over the top and garnish with green onions.
